Mutton Biryani Recipe

📝 Ingredients

For marination:

  • 500g mutton (bone-in preferred)
  • 1 cup curd (yogurt)
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1–2 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • Juice of 1 lemon

For rice:

  • 2 cups basmati rice
  • Whole spices: bay leaf, 4 cloves, 2 cardamom, 1-inch cinnamon
  • Salt

For gravy:

  • 2 large onions (thinly sliced)
  • 2 tomatoes (chopped)
  • 2–3 green chilies
  • Fresh coriander & mint leaves
  • 3 tbsp oil or ghee

🍳 Step-by-Step Preparation

1️⃣ Marinate the Mutton

  • Mix mutton with all marination ingredients.
  • Let it rest for at least 1–2 hours (overnight is best for soft meat).

2️⃣ Cook the Rice

  • Wash and soak basmati rice for 30 minutes.
  • Boil water with whole spices and salt.
  • Cook rice 70% done, then drain and set aside.

3️⃣ Prepare the Mutton Masala

  • Heat oil/ghee in a pan.
  • Fry onions until golden brown.
  • Add green chilies and tomatoes → cook until soft.
  • Add marinated mutton and cook on medium flame.
  • Cover and cook until mutton is 80–90% done (you can use a pressure cooker for faster cooking).

4️⃣ Layering the Biryani

  • In a heavy-bottom pot:
    • Add mutton layer
    • Add rice layer on top
  • Sprinkle:
    • Mint & coriander leaves
    • Fried onions (optional)
    • A little ghee

5️⃣ Dum Cooking (Final Step)

  • Cover tightly (use dough or lid).
  • Cook on low flame for 15–20 minutes.

🍽️ Serve

  • Mix gently before serving.
  • Serve hot with:
    • Raita
    • Salad
    • Boiled egg (optional)
